🥥 Brazilian Rice Pudding with Coconut, Caramel and Doce de Leite

1 cup Brazilian rice

Water (for cooking the rice)

2 cups milk

1 cup coconut milk

1/2 cup condensed milk (or to taste)

1/2 cup shredded coconut

1 cup doce de leite
Caramel

1 cup sugar

1/2 cup cream
How to Make

Cook the rice in water until partially cooked (not fully soft).

Add the milk, coconut milk, condensed milk, doce de leite, and shredded coconut.

Stir well and let it simmer on low heat until thick and creamy.

For the caramel, melt the sugar over medium heat until golden. Carefully add the cream and stir until smooth.

Serve the rice pudding warm, drizzle with caramel, and finish with extra doce de leite 😍
